I don't think that your Modeste/Maude is the daughter of Germain and Nathalie Cyr.

As you can see if you follow the links, Germain Levesque was the nephew of Father Henri Dionne. In fact, Germain had a close relationship with his uncle.
Father Dionne was pastor at Ste Luce Church in Frenchville until early 1860, and died in March 1861, so he definitely did not marry William. For detailed information on Father Dionne go here:

You can see there is a "Mary" who is one year old.

You can see that in this census, as in 1860, there is a "Mary" who was born in 1859.
Looking in the baptismal record, this is the child listed as "Mary Beatrix", baptized 10 July 1859:

But I think this is the marriage record for her:

So this is unlikely to be your Modeste.
There is, however, a Modeste Leveque baptized on 10 February 1860, having been born on the 9th, at St. François church, by Father Sweron.
As you can see, she's the daughter of Beloni Levesque and Sophie Dubé. Here's their marriage info:

Benoni and Sophie show up in the 1861 New Brunswick census in Madawaska (p.2):

As for Elie Dionne, I don't see him directly related to Henri Dionne. Here's the record of his marriage:

Henri Dionne's parents were Antoine Dionne and Salomée Miville Deschenes, and his grandfather was Benjamin Dionne. Dionne's a pretty common last name.
